Ask what depth the design assumes on your lot and what the installer does if a pier reaches refusal much shallower or much deeper than that.
Both types hold houses up all over Williamson County. The short answer: the soil under your lot, the depth to firm ground and the weight being carried decide it, not a preference.
Pressed concrete piers are cylinders of concrete pushed into the ground one section at a time using the weight of the house, then capped and shimmed to carry the slab. Steel piers are pipe sections driven the same way, but they are narrower, so the same pushing force takes them deeper. In deep Blackland clay, where the ground stays active well below the surface, either can work if it goes deep enough. On lots with rock ledges, old fill or unusually deep active soil, steel often makes more sense. For a straightforward single-story house on consistent clay, pressed concrete is frequently the practical choice.
What matters more than the material is that the design is based on real measurements: where the house is low, how much load each pier carries and how deep firm ground actually sits on your lot.

They suit houses where the soil profile is consistent and firm ground is within reach, which covers a lot of the slab housing east of I-35. The concrete sections are wide, they bear on a large surface, and the installation is well understood. Cost per pier is usually lower, so on a long run of exterior piers along one side of a house, the difference adds up.
They are commonly used for slab foundation repair and for leveling work where the whole perimeter needs support. Ask how deep the piers are expected to go and what happens if a pier refuses early.
Steel piers earn their place where the ground is awkward: fill dirt on a cut-and-fill pad, shallow rock with soft pockets underneath, or very deep clay where a wider pier would stop short of stable ground. Because each pier is driven with the house as the reaction weight, the installer can watch resistance build and stop at a measured refusal rather than a target depth.
Heavier structures are the other case. Two-story masonry, an added upper floor or a commercial slab carrying racking loads may call for steel. Tight access can also point that way, since the equipment footprint is smaller. Either way, the design belongs on the pier plan that comes with your quote.
